This is a quick, easy and even healthy dinner idea. I made a salad and sauteed some shrimp for a great weeknight meal. Did you know that shrimp are really good for you? Like, really.
Here is what you need:
- 1 pound of raw (de-veined if possible) shrimp
- 2 tsp of garlic (I used the chopped garlic in the jar that you can buy)
- 2 tablespoons of butter (you can just use olive oil if you want but I like the extra flavor)
- 2 tablespoons of olive oil (you might need more, just judge when you start cooking)
- Salt and Pepper to taste
(feeds 3 people)
Place all ingredients in a bowl and toss. I did this while my daughter was napping and threw it in the fridge but you can do it right before you cook it too.
Grab a large skillet and pour the shrimp mixture in. I had to do it in two rounds since my pan wasn’t large enough.
Once you see them getting a little pink, turn them over. It only takes couple minutes. They will be more firm but they shouldn’t be super hard which means they are overdone.
Place them on a plate, make a salad and you are in business!
